Sunday’s are a wonderful thing; full of possibilities, adventure, friends and family. So why not start your Sunday on a good note with a lazy protein and veggie packed breakfast that will prepare you for everything from AFL to the Zoo?
Eggs are a perfect powerhouse of protein, fats and minerals so when paired with fresh veggies the combination is delicious AND nutritious!
Lazy Sunday Scrambled Eggs
Serves 2 people
- 4 farm fresh eggs
- 2 slices of free range naturally smoked bacon (nitrate free), sliced
- 3 medium tomatoes, diced 1 cm thick
- 1 zucchini, diced 1 cm thick
- 1 clove garlic, crushed
- 1/2 onion or shallot
- Chives to serve
- Salt & pepper to taste
- Butter and Coconut oil
Take a large mixing bowl and crack the eggs in (you can add a little milk here but I don’t tend to) then whisk with a fork until fully combined.
Add the bacon, tomatoes, zucchini, crushed garlic and onion, here you can add the salt & pepper too. Simply mix the ingredients in then heat a shallow fry pan on medium with 1/2 tsp butter and 1/2 tsp coconut oil (this stops the eggs being tainted with the coconut taste and adds a creamy addition to the texture). Once the pan is hot simply stir the fat and add your mixture!
You can serve this with your favorite bread or alone but this easy recipe will keep you full and happy through whatever Sunday brings.
